The BEST Low Carb Pizza Recipe (THM S)

Seriously... this is the BEST low carb pizza recipe! If I close my eyes while eating it, it's just like a mouthful of NYC-style pizza-- the stuff that I grew up eating! And it's all wrapped up in a great, big, delicious THM S! Mmhmmm!

I discovered this during a season when I was cooking everything from scratch and I had just acquired a basil plant, so there's lots of work involved in this but totally worth it. I'm working on streamlining the process.

This recipe actually got the hubby's stamp of approval, which does not come lightly. Also, this elusive stamp has not been given to any other on-plan pizza, and we have tried quite a few! Fathead, chicken crust, sprouted whole wheat, almond flour, and so on and so forth...

This one wins!!

We hope that your family enjoys it as much as ours does, but be warned-- you might have to make twice as much as you think you need because it's going to get devoured. It's that good!

The Best Low Carb Pizza Crust

16 ounces frozen cauliflower, defrosted
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Italian seasoning
1 egg, beaten
1 tsp coconut flour
3 oz fresh mozzarella, melted in microwave for 30 seconds and water drained off

Pulse cauliflower in food processor until it's in rice-sized pieces. Fill a pot with 1 inch of water, bring to a boil, and add cauliflower. Cook 4-5 minutes. Line a colander with a tea towel, pour cooked cauliflower into it. Let drain while you place the rest of ingredients in a large bowl. Use tea towel to wring out excessive water from cauliflower, then add it to the bowl. Mix thoroughly. Line a 9x13 pan with parchment paper, then press crust into pan. Bake at 400 degrees for 35-40 minutes.

While pizza's cooking, make bacon for topping and tomato sauce.

Bacon:

Place 1-2 strips bacon in a foil-lined pan and bake with pizza crust in the oven for 15-20 minutes until crisp. (you don't have to use foil but it makes clean-up super easy!)

Best Pizza Sauce EVER:

1 14.5 oz can diced tomatoes with Italian seasoning, garlic, and onion
1/4 tsp garlic powder
2-3 dashes mineral salt
1/4 tsp gluccie

Add all ingredients food processor (no need to wash from the cauliflower) and blend thoroughly, then add to your cauliflower pot, Mix well and simmer over low heat while pizza cooks.


To make pizza:

Top crust with small amount of sauce (freeze the rest for your next pizza night), cheese, bacon, other desired toppings, and fresh basil. Bake 5-10 minutes until cheese melts, then broil on high for 2-3 minutes until cheese bubbles.

Enjoy! This made a pizza that served the two of us and our toddler, and we could even pick it up with our hands and eat it! Delish!

Quick and Easy Crockpot Chicken Nachos (THM E)

I love me some chicken nachos! Yummmmm-E (haha, get it, it's an E recipe, sorry- couldn't help myself!). Growing up, we ate out at Mexican restaurants frequently, and I always order chicken nachos. Now that I'm a Trim Healthy Mama, I wanted to recreate one of my favorite treats in an on-plan way. This meal totally did that for me, with the added bonuses of being ridiculously easy and quick.

Also, I know E meals can be a struggle for some Mamas. I absolutely love 'em because I'm a recovering carb-o-holic! I love that Jesus is the Bread of Life because I definitely need my daily bread (both Him and the one you chew!), so I love an eating plan that lets me get my carbs in. I would love to share my favorite Energizing recipes with you on this blog, and it will probably make my family happy if I share my excitement about food with y'all instead of just telling them about it over and over and over....

But, this meal very could be one that you'll want to talk about and make over and over and over... it's really that delicious! As is, this recipe is an E, and you can add 1/3 cup of brown rice or a handful of baked corn chips to it to round it out. It's got a creamy, decadent flavor even without cheese, but if you're in the mood for a fabulous crossover, it's fantastic smothered in cheddar cheese. If you really want nachos but not the corn from chips, you can make chips with Joseph's pitas or lavash bread (either of these options are a FP). Yum yum!

Without further ado, here's my new favorite recipe!

Quick and Easy Crockpot Chicken Nachos

Serves 4-5, easy to double

2 large chicken breasts
16 ounces salsa
1 packet of taco seasoning (or make your own)
4 ounces reduced fat cream cheese
1 can black beans, rinsed and drained and refilled with water to the top
1/2 tsp gluccoman 


Place all ingredients (except for gluccie) in the crockpot pot and cook on high for 3 hours or low for 5-6. Just before serving, remove chicken and shred it. 
Add gluccoman to crockpot with other ingredients and stir. Add chicken back into crockpot and stir. Cover for a few minutes while prepping plates and calling everyone to dinner. The meal should thicken and then dinner's ready!
